Easy cheesy bean quesadillas
Easy and cheap meal for a quick weeknight bite. Refried beans with cheese in a chrispy corn shell, servie with your favorite dipping sauce or sour cream and you're golden!
Equipment
- Griddle or Frying pan
Ingredients
- 1 tbsp oil
- 1/2 can refried beans
- 1 tbsp cumin
- 1 tbsp chili powder
- 1 tsp cayenne powder
- 1 tsp salt
- 8 corn tortillas
- 2 cup cheese
Instructions
- mix seasoning in refried beans, add a little water if beans are too dry and not mixing well
- add beans to one side of tortilla and cover with 1/4 cup cheese, fold in half
- fry in lightly oiled pan or griddle – add a small sprinkle of cheese to the pan/griddle to get a crispy outside cheese shell!
- Serve! Side of taco sauce or sour cream is great. We always use plain greek yogurt as it's always in the house anyways and gets you a bit more protien that sour cream.
